The Maya Kitchen: European Food Made Simple

I was invited once again to wonderful cooking demo at The Maya Kitchen and the featured Chef was none other than Chef Cara Davis, this young Chef had showcase us her talent in cooking specially with European Dishes. She can create pasta from the scratch and she seems like she love's doing. Together with her Uncle Pepe as her executive sue chef to assist her.

She gave us different tips on how to make Salmorejo Soup, sounds interesting right? She even tell stories about her experiences during the time she was in Spain and cooked Salmorejo Soup for the locals. This classic dish uses a blend of herbs used in traditional French cuisine. Making this recipe is so simple and this soup can be eaten as is or garnished with chopped hard boiled egg and crispy jamon serrano chips. To make it more delectable you can also serve it with rustic bread and a drizzle of olive oil.

Next we have Cavatelli Pasta with Pistachio Pesto, I love this one the taste is very authentic and the pasta was so fresh for it was hand made on the day itself. It may needs extra effort in preparing this but I'm telling you, this one is really great because the combination of basil, parsley, pistachios and parmesan cheese was awesome. Chef Cara also said that when making a pasta dough, the flour should be the double 00.

Another special recipe on the list was the St. Peter's Fish with Beurre Blanc. The fis is very easy to cook because it is not easily overcooked. it is perfect with the velvety and tangy sauce that Chef Cara was made. And of course, the Chicken Fines Herb. This is a classic dish uses a blend of herbs used in traditional French cuisine and this one is my favorite.

To end the final list, Peach Galette is making its way to our table as our dessert. The flaky crust of this simple sweet dessert is versatile as it can be easily adapted to other savory flavors. I remember the procedure in making biscuits with this recipe but the difference is that you have to mix the tiny chop frozen butter in the flour as fast as you can so that the butter will  not melt.

Easy And Tasty Recipes For Scariest Day Of The Year By Philips and Nancy Reyes-Lumen

Trick or treat? With the help of Philips and seasoned foodie Nancy Reyes-Lumen, you can learn new tricks to prepare delectable treats this Halloween. The two have prepared a list of mouth-watering recipes to make this year’s celebration more festive.

“Halloween has become a favorite occasion among Filipinos,” describes RJ Buenaventura, General Manager for Philips Consumer Lifestyle. “Halloween parties and trick-or-treats never fail put anyone in a mood.”

Business Development Manager for Philips Domestic Appliances Pia Umayam has an advice for anyone who wants to make this season extra special. “You can add a creative twist to your Halloween party with home-made goodies that your friends and loved ones will surely appreciate.”

Tasty Rice in a Pumpkin

P1000443Stray away from the usual candies and chocolates and surprise your loved ones with something that can leave them truly satisfied. This recipe is definitely a great and healthy twist to your regular jack-o-lanterns.

Ingredients:

Pumpkin
150gm piece of chorizo, chopped (add more if preferred)
100gms onion, chopped
50gms garlic, minced
2 chicken cubes
1 medium green bell pepper, diced
2 medium red bell peppers, diced
1 ½ cups of rice
2 cups water
2 tablespoons oyster sauce
Freshly cracked peppercorn
Pumpkin pulp

Nancy’s Tip: “The secret to this recipe lies in the preparation of the pumpkin. I recommend the Philips Rice cooker because of its big pot and 3D heating feature that evenly distributes heat for better cooking.”

Steaming the Pumpkin:

1. Choose a pumpkin that will fit into the pot of your Philips Rice Cooker. Depending on your preference, you can put it whole or as a big wedge.
2. Cover ¼ of the pumpkin with water and steam-cook till tender. Depending on the size of the pumpkin, it should be tender after about 20-25 minutes.
3. Remove the seeds and the pulp once pumpkin is tender. This will make the pumpkin firmer even when fully steamed.
4. Scrape off some of the pulp and chop to add to the stuffing later.

Pumpkin Stuffing:

1. Put all the ingredients together in the rice cooker.
2. Cook in one cycle till rice is done.
3. Check taste and adjust seasonings.
4. Keep warm till ready to serve.

Zombie Gingerbread Cookies

P1000450
Give zombies a jolt of life by turning them into delicious desserts! This zombie gingerbread cookie recipe will surely be a favorite of both kids and kids-at-heart.

Ingredients:

2 ½ cups all-purpose flour
½ cup unsweetened cocoa powder
1/3 teaspoon baking salt
¼ teaspoon salt
1 cup butter, softened
1 cup sugar
1 large egg

Procedure:

1. Blend the first 4 ingredients together.
2. Cream butter till light yellow.
3. Add sugar gradually in ¼ cup portions.
4. Beat after every addition till light and fluffy.
5. Beat the egg.
6. Then blend in 1/3 of the flour mixture.
7. When smooth, blend in the rest of the flour mixture to create the cookie dough.
8. Flatten and wrap in clear plastic then chill in the ref.
9. When it is firm enough, flatten and cut into gingerbread shapes.
10. Bake in Philips Airfryer at 180 Cfor about 10-12 minutes

Nancy’s Tips:

·  “The Philips hand blender is great for blending ingredients. Its whisk accessory is very efficient in making the dough fluffy because of its ProMix technology that offer the best speed settings as well as consistent and faster blending.

·   “Your cookies are ready once they are dry to the touch and the edges have changed color. After leaving them on the rack to cool, use a toothpick to carve your gingerbreads’ faces.”

You can also opt to give your guests a refreshing drink by offering a thirst-quenching and healthy glass of pumpkin juice. The Philips Blender is an easy and efficient kitchen partner to use for this because of its ProBlend 5 technology that provides smooth and finely blended results.

Umayam says, “Halloween is a great and unique chance to bond with the kids and the kids at heart. Make your celebration more memorable by enjoying it the spooky, fun way.”

A Filipino Heritage: TRILOGY

What makes art or design distinctly Filipino? This question has always been asked, posing a challenge to visual arts and national identity. A few decades ago, this was not much of an issue but through the years, historical buildings, churches, monuments, homes, iconic structures, architectural designs have been devastated by earthquakes and other natural calamities or intentionally torn down.

TRILOGY is an exhibition that brings the audience into the world of heritage: how its is created, how is it nurtures, and how it is brought back to life. Is heritage the building? Is it the city? Is it the memory of what was then? Or is it the person who is the keeper of knowledge passed on from one generation to the next?

Perhaps it is all these, for heritage defines identity. It is who we are 0 when we learn o accept it. Through the objects, buildings and environments that were created throughout our people's history, we are made to experience how it is to be Filipino.

TRIOLOGY is composed of three stories: the world of the craftsman of Betis, Pampanga, another that illustrates how Vigan celebrates an entire city's heritage, and the last one that tells us that what had been lost in Intramuros during the war is worth definitely recuperating. In all three, countrymen and government work hand-in-hand t keep the knowledge, memory, and manifestations of our identity intact.

TRIOLOGY invites us all to participate in the work of creating, preserving, and restoring our heritage, so we may be able to transmit these to future generations of Filipinos, as our identity is in our hands.

The exhibit will run from October 15-28, 2014, at the Art Pavillion, 2F LRI Design Plaza, Nicanor Garcial St., Bel-Air II, Makati City.
