At The Cob Of The Matter: Corn In The Philippines

When you hear the word corn, the vision of eating hot, buttered corn-on-the-cob may come to mind, or fields and fields of corn plants growing along highways. Indeed for Filipinos, corn is the second most important crop after rice. But do you know that only 21% of the total corn in the country is used for consumption, while majority or 64% of corn supply is used to feed livestock to produce meat and poultry?

Unsheathing corn

The corn you typically see roasted and eaten on the cob is the white corn. With smaller but sweeter kernels, white corn is the most important and healthy rice substitute in the country. On the other hand, yellow corn, while edible, is mostly intended for livestock and poultry feeds with its larger and fuller-flavored kernels. Perhaps most importantly, local pork, beef, and poultry for our lechon, burgers, and fried chicken get their richness and tastiness from the animal feeds usually made from corn. Corn makes up 70% of feeds used to produce treats for our carnivorous countrymen.

And in case you didn’t yet know, corn can also be found in thousands of everyday items around us. From the corn starch that holds cakes and pastries together to corn oil, people have found different uses for corn. There are currently more than 4,000 ways to use this popular crop, and people are discovering even more ways to use corn every day.

Planning for tomorrow’s food from the ground up

Corn is thought to have been first grown 7,000 years ago. The traditional way of growing corn is slow and painstaking, but technology is now dramatically changing the way we cultivate and harvest our food. Today, there is a modern approach to help growers raise healthy, high-quality corn crops.  Through modern plant breeding, a way to bring together two specific parent plants to produce a new desirable plant, local farmers now have a better way to grow and bring food to our tables.

As corn takes an important place in Filipino farming and cuisine, Monsanto took a similar approach in helping farmers have better harvests by introducing the first biotech corn in 2003. It developed the biotech corn to be more tolerant to nature’s different challenges, like plant diseases, pests and changing temperatures.  Over the past 30 years, 1,000 plus studies including the World Health Organization, European Food Safety Authority, and Food and Agriculture Organization of the United Nations have been conducted to prove that there are no health and environmental impact in the use and consumption of biotech crops, including corn. According to the studies, using or consuming biotech corn have no effects on human health, while planting biotech corn maintains ecological balance, posing no threat to other plants and to animals.

Corn plays an important role in making sure we have enough food to eat and have access to fresh produce. So the next time you see unending rows of corn fields along the highway, think about how such a humble crop can make a positive impact to our everyday lives.

My Premium Gin Journey With Ginebra San Miguel

It was such a world class experience when I was invited to join and experience the a wonderful journey with other blogger friends who ride the Party Bus Manila around Makati and BGC.

The night was full of fun, games and great talks as we enjoy the variety of cocktails of three different bars in the Metro. We started at Keg and they serve us the Gin Sour, Gin Sunrise and Tom Collins. I personally love the Gin Sunrise because it has a juice like taste but the kick is at the end part. It hides the real essence of the drink while you enjoy sipping it and eventually realize that it has an alcohol content.

Then we ride at the Party Bus, which is one of the great experience that night as we travel to Red Dot in Legaspi Village in Makati. We tried another three cocktails that they prepared such as Sake Cooler who is in the copper mug and very refreshing and taste like Gulaman for me, the Rosemary which is kinda sweet and smells good really and The Red Dot which is the signature drink of the place. It is similar to Singapore Sling and has a brandy, pineapple juice, lemongrass and a dot of grenadine. Actually, the Red Dot taste good but very strong. Well, I can't finish the whole drink and I admit it.

Lastly we went to Rue Bourbon at the Fort and we have the Scottish Margarita, Blue Alexander, Clear Blue, and Party Bus Cocktail. OMG! I feel like tipsy that night. So I decided not to drink everything. What I did is to try a sip on each of those drink and just enjoy the night talking to other bloggers so that I can still carry myself and go home.

I never thought that night that it would be that fun. We even had games inside the Black Fleet while driving to our next stop and party, party of course. By the way, all drinks we had has a Premium Gin from Ginebra San Miguel. I never thought that you can make a lot of drink mixes with it. Before I only new it by mixing the gin with other juices but that night. Almost ten drinks that I have tasted has it. Imagine what more can you do with the world class premium gin.

The launch of the Premium Gin Journey with their partnered establishment was truly amazing. It is indeed not just a typical event that let's you drink all you can but a delightful experience of savoring specially hand crafted mixes of Ginebra San Miguel Premium Gin made by Filipino mixologist of each bar we visited.

The Biggest & Juiciest Pork Ribs In Town Is Coming To Uptown

Morganfield’sTM, an American diner offering the biggest & juiciest pork ribs in town is sure to become another foodie destination when it opens in Uptown Place at Fort Bonifacio after making waves in Malaysia, Singapore and China.

Their heavyweight hero, Sticky BonesTM is an authentic prime pork rib slowly baked and smoked for hours in coal and hickory wood, grilled to perfection so that it is off-the-bone juicy, then basted with the sweetness and tanginess of their special homemade BBQ sauce, a unique hickory barbeque sauce that comes with a hint of cider. Priced at only P750 for half slab and P1,395 for full slab, this is definitely good for 3 or more.  Their spare ribs also come in four flavors:  Hickory BBQ, Garlicky BBQ, Smoked Peppercorn and Spicy Asian BBQ catered just for Asian taste buds!

Ever heard of the saying pigs can’t fly? Not true in this case as another Morganfield’sTM must-try, the premium Iberico Baby Back ribs, are specially flown in from Spain. Being a rare breed of black hog renowned for its remarkably tender texture and one-of-its-kind taste, this national treasure from Spain has the unique ability to store fats in muscle tissues to give one that melt-in-your-mouth texture. Its main diet of acorns also helps generate a high percentage of mono-unsaturated fats in their meat, so much so that Spanish locals call it “olives with legs” - so diners can afford to indulge all they want.

Their porky menu also offers the homemade Pork Sausage Platter, Bacon Wrapped Meat Balls, Pork Ham Chops, Pork Shoulder Chops, pork burgers and hot dogs, Bacon Wrapped Prawns, plus more than 50 one-of-its-kind dishes ranging from seafood, steaks, burgers and sandwiches, tacos, soups, salads, appetizers and mouth-watering desserts. For those who like to try a bit of this and that, the platters good for 3 - 4 are a great choice.

Apart from the great food, Morganfield’sTM also offers various types of dining areas, from the breezy al fresco area, the hype full sized bar and the casual long tables and benches perfect for family gatherings.

Raw, unpolished red bricks give the place a rugged yet authentic industrial barn atmosphere; blended
seamlessly with recycled, aged wood to lend a vintage vibe that is both timeless and inviting.

To celebrate their opening on Nov. 28, Morganfield’sTM is also offering a free half slab of spare ribs or a bottle of wine to the first 100 customers who will order their sharing platter – a great way to get more of those delicious ribs!

So head on down to Morganfield’sTM located at the 2nd Floor of Uptown Place in Fort Bonifacio.  For more information, log on to our website www.morganfields.com.ph or our official Facebook account at www.facebook.com/morganfieldsph.

Now You Can Experience The Tapa Festival of GoodAh!!!

I was invited to try the food for a Tapa Festival from one of well-known fast food when it comes to Tapsilog, GoodAh!!! It was known in their Goto Special and Tapsilog during mid-90s. One of my favorite place to dine-in when I was young. My favorites are Goto Special and Cicken Mami way back then. Today, it was one of the favorite Tapsilog places where you can have a variety of choices.

GoodAh!!!, offers the Tapa Festival with three wonderful set of Tapa options such as Original Tapsilog, Tapa Bacon, and Tapa Flakes.

During the event, we have guilt free Chicharon which is so yummy and perfectly pair with their Chili Vinegar (Maanghang na Suka ). I almost forgot that the event was about the Tapa Festival because the Chicharon was really tasty, we even joked to each other that the only missing is rice and it’s like a complete meal.

After a short introduction from the Ms. Tess, we have now a better understanding about the company and the brand of GoodAh!!! Then the parade of Tapa was on its way to our table and the fest was started.  First we have the Tapa Flakes which is shredded beef flanks cook adobo style and dip fry served with garlic fried rice, sunny side up egg and atchara.  I don’t usually eat sunny side up egg, so I requested to them to cook it well done for me. However, the Tapa Flakes is my number one choices even I haven’t try the other two. I love its flaky texture and the crunchy bits of Tapa, although, it looks messy but it was a hit for me.

It was followed by the Original Tapsilog which is 100% marinated beef sirloin served with garlic fried rice, sunny side up egg and atchara. It was their signature Tapa, I actually tried it before in their other branch. Their Tapsilog is kind of sweet and it’s one of the favorites in all branches of GoodAh!!! I like it but not as much as I like the Tapa Flakes.

Lastly, we have the Tapa Bacon which is the strips of pork belly marinated with powdered smoked flavor and spices served with garlic fried rice, sunny side up egg and atchara. I don’t personally like it, the bacon was kind of elastic and I can’t figure out its taste maybe because of the oil coming from bacon. However, it’s something new to me which makes me interested to try when I first saw the fact sheets of Tapa Festival.

I suggest that the Tapa Flakes should be included in their original menu as a regular menu because it’s something new to add on their list and people will love it.  For the Original Tapa, what can I say its classic and the taste is really the same and consistent. For the Tapa Bacon, I did not like it much. It should be better if the bacon was crunchy and a little salty and sweet.  I think the sunny side up egg and atchara can be replacing with salted egg and tomatoes.

Over-all the Tapa Festival menu was great, perhaps my opinion when it comes to food is different from others and what I said here is my own option that based on my palates.

To try the new offering of GoodAh!!! Visit their branches and try the Tapa Festival. Let me know your thoughts and your favorite among the three by commenting below and let’s discuss our thoughts about the Tapa Festival of GoodAh!!!

Like GoodAh!!! on Facebook and Follow them on Twitter and Instagram. For Deliveries, you may call 4-707070 with Php100 minimum delivery and Php40 delivery charge. GoodAh!!! is open for 25 hours a day.
